What began as a single downtown taco stand is now a handful of small Cabo San Lucas locations serving street-style carne asada and al pastor late into the night. No website, no reservations — just a trompo, a griddle and a salsa bar.

It grew because the tacos are good, not because anybody marketed it. Prices stayed local even as tourists found it.
